I think that the term recovering means that you still admit some tendencies towards something but that it is in the past and you are glad it is behind you.

Obviously the term stems from 'Recovering Alchoholic". An alcoholic is never cured of alcoholism, and can never enter society as a person who can just have one drink socially. It implies that alcoholism is a disease from which one is recovering.

So when one claims to be a recovering catholic I imagine that they are implying that catholocism is a disease to be recovered from.
